KALLARI is the only farmers’ cooperative in the world that harvests, markets and enjoys all profits from its own line of organic chocolate. It is produced by a coalition of 850 indigenous Kichwa families in the Naporegion of the Ecuadorian Amazon. The chocolate is intensely flavorful and delicate, with an extended finish and hints of fruit. Unlike other artisanal dark chocolates, which compose a taste profile by blending multiple source cacaos, KALLARI acquires its complex, nuanced flavor through the harvesting of endemic varietals found on small, family-owned Kichwa Farms. KALLARI’s fresh, unadulterated taste and its absence of bitterness derive from this field blending of single-source noble varietal beans, primarily the rare and much esteemed Cacao Nacional, with hints of Criollo, Trinitario, Venezuelan, and Blonde Cacao.
Prized for centuries in the chocolate trade, Cacao Nacional was overplanted on factory farms in the early 20th century, suffered widespread blights, and neared extinction. But the bean survived and flourished in the Napo region, where it was protected by traditional cultivation techniques. The Napo is an ecological treasure. Home to 17 percent of the world’s bird species, Napo’s rain forests convert large quantities of Earth’s carbon dioxide emissions into clean breathable air.
KALLARI’s Cacao Nacional varietal has been honored by the Slow Food Foundation with inclusion in its Presidium project, which recognizes traditionally crafted foods that promote biodiversity. The production of KALLARI chocolate offers sustainable economic alternatives to families who might otherwise abandon farms or sell to logging and oil interests. One hundred percent of the profits from KALLARI sales return to the farmers’ cooperative to support education, health, and sustainable-development initiatives.

Kallari Association
The Kallari Association is a self-governed coalition of Amazon artists and organic cocoa producers. Our cooperative began in 1997 with less than fifty families and has now grown to over 850 families. Kallari has created sustainable income so Kichwa people can fulfill our basic family needs without logging our rainforests or selling our land. Our export of handcrafts has inspired the Kichwa youth to learn and practice traditional harvesting, dying, weaving and carving techniques. Just ten years ago, middlemen kept profits for themselves and set low prices for cocoa beans. Today Kallari communities sell as a single unit, ourleaders travel to Europe and North America to negotiate prices for our harvest. We have recently taken empowerment a step further: Kallari produces and sells gourmet organic fairly traded dark chocolate bars.
